Shimme is the owner of sixunderscore LLC, a bakery and natural foods consulting company assisting businesses in strategic operations, brand development, product launch, training, and merchandising. A large portion of Shimme's career was spent at Whole Foods Market, where he served as the Bakery Director for the Northeast Region. Most recently Shimme was the Senior Director of Operations for Hot Bread Kitchen, a not for profit social enterprise wholesale bakery and food incubator located in New York City.
